The only way I've used quinoa is as a side dish or, used as a topping in a yogurt parfait kind of thing. But, that usage is interesting and sounds like it would work. If you make it post your results - I'd be curious to know how it was.

Yeah I've only used it in side dishes as well but the chili concept definitely sounds intriguing. I'll keep you posted on any experiments.

How did you use quinoa as a parfait topping?

You cook it fairly plain, it's used sort of in place of granola when I've had it but can be an adjunct topping also.

Here's a recipe to show how it's utilized. I haven't made this, but probably will soon.

I agree it sounds interesting. It probably will suck up a lot of liquid so keep an eye on that

I wish I actually showed the quinoa chilli a little more but I'm not the best food stylist. Plus I'm a wee bit stoned so I made sharp cheddar biscuits while I was at it lol. Quinoa turned out to work quite well for a meatless chilli and perfect for this cold and blustery day.

We're stoned also :P
I made a meatloaf, mashed potatoes and garlic green beans. Basic comfort meal. It was kind of an overcast day here and it seemed apropos to the weather.

Quinoa chilli started with browning some diced onions and garlic then added tomato paste, chilli powder, cocoa and this tandoori masala my friend gave me. It's so tasty I even put it on popcorn. Added in black beans, kidney beans, chick peas,diced tomatoes, and some vegetable stock so it's quite loose at this point. Some of the recipes I saw cooked the quinoa separately but I just added in about 3/4 cup of well rinsed quinoa and let it all simmer. It retains it's texture really well. Topped with avocado,cheese, green onion and sour cream.

Edited: added in some corn at the end and warmed through before serving.

Oh that's funny that those biscuits are the Red Lobster knock-offs. I actually bookmarked that about a month ago from somewhere else. Those are freakin' addictive!

I had a bowl of cereal and a bowl of mashed potatoes.
I have a half a gallon of milk that goes bad tomorrow.
I have to find a way to use it all up.

I think I am going to make some cornbread with it for tomorrows dinner.

Across-the-hall Lady gave me some fried chicken tonight. I just asked her for the recipe but she wouldn't give it to me.

It's prolly for the best - if I had realized fried chicken could taste this good I'd probably be eating a lot more of it than is really good for me, ha!

It's all in the technique, Dakota. Great fried chicken is nothing but chicken and some flour/spices and oil. (just flour, none of this wet coating business) It's how you cook it that makes it great. But probably the oil used, too. Cast iron pans are a necessity for one thing. I have no idea why my Aunt Billie's chicken was so fantastic, like so many southern cooks, she just seemed to throw it in a pan and that was it, lol. You try it and it's never as good. My mom's was second best, she learned from her and had a great seasoned pan, as well. And Wesson corn oil, I think.
