Not just for veggie lovers, but for anyone who loves to eat healthy with vegetables and want to share recipes, experiences, dietary concerns and more!

Thanks, Briana. Not a vegetarian (yet), but I'm always interested in learning more veggie main courses.

I will never get my husband to give up meat, but I could easily give up beef. Bacon is another story.

In first life I am a vegetarian not for any political motivation but because I just find meat too heavy for my taste. In Second Life I have taken it one step further and I don't eat anything, no veggies, no meat, not pixels just nothing.

Ok, If i am to be truthful, maybe I eat the occasional avatar but that is another story. I still don't swallow.

I'm not vegan or vegitarian but soups are easy to do vegitarian and great this time of year when it's cold outside.

My two current favorites:


(Best tomato soup I ever had)
Roasted Tomato Basil Soup from the Barefoot Contessa.

* 3 pounds ripe plum tomatoes, cut in half
* 1/4 cup plus 2 tablespoons good olive oil
* 1 tablespoon kosher salt
* 1 1/2 teaspoons freshly ground black pepper
* 2 cups chopped yellow onions (2 onions)
* 6 garlic cloves, minced
* 2 tablespoons unsalted butter
* 1/4 teaspoon crushed red pepper flakes
* 1 (28-ounce) canned plum tomatoes, with their juice
* 4 cups fresh basil leaves, packed
* 1 teaspoon fresh thyme leaves
* 1 quart chicken stock or water

Directions

Preheat the oven to 400 degrees F. Toss together the tomatoes, 1/4 cup olive oil, salt, and pepper. Spread the tomatoes in 1 layer on a baking sheet and roast for 45 minutes.

In an 8-quart stockpot over medium heat, saute the onions and garlic with 2 tablespoons of olive oil, the butter, and red pepper flakes for 10 minutes, until the onions start to brown. Add the canned tomatoes, basil, thyme, and chicken stock. Add the oven-roasted tomatoes, including the liquid on the baking sheet. Bring to a boil and simmer uncovered for 40 minutes. Pass through a food mill fitted with the coarsest blade. Taste for seasonings. Serve hot or cold.


And Cannellini Bean Soup with Kale

Ingredients

* 1/4 cup extra-virgin olive oil, plus more for the bruschetta
* 6 to 8 cloves garlic, thinly sliced, plus 1 or 2 more whole cloves
* 2 teaspoons dried oregano
* 1 (6-ounce) can tomato paste
* 2 tablespoons red wine vinegar
* 2 (15-ounce) cans cannellini beans, drained and rinsed
* 2 quarts chicken stock, water, or a combination
* Salt and freshly ground black pepper
* 1 large bunch kale, large ribs removed, chopped
* 1 baguette

Directions

Heat oil in a large pot. Add garlic and oregano and cook no more than a minute. Add tomato paste and vinegar, and cook another minute. Add beans and stock and bring to a simmer. Season with salt and pepper. Add kale and simmer, partially covered, for 1 hour. Season, to taste, again with salt and pepper before serving.

Slice baguette on a heavy angle to create long slices. Toast in a toaster or in the conventional oven. Rub once or twice with half a garlic clove. Season a shallow plate of extra-virgin olive oil with salt and dip each side of bread into the oil. Serve as accompaniment to the soup.

Not to mention the way margarine tastes - yuck.

Any way count me in. I don't eat meat for pretty much all the usual reasons - but mostly because I feel sorry for animals. I have no problem with other people eating them but I don't need to. I do eat eggs and dairy, though. I like all butter pie crust.

Well, I for one love a thick juicy steak, medium rare with a glass of rich red wine but if vegetarian is your thing, it is fine with me as long as nobody expects everyone to go vege.

I was a vegetarian for a couple of years. It was easier giving up meat than I thought it would be, especially Chicken which even now I rarely eat. I was never a vegan though, I like cheese too much

I stopped eating meat on a whim as an experiment, first red meat, then poultry, and finally seafood. I never even thought about eating any of it again. 30 years later I've developed all kinds of reasons and possibly some neurosis to explain it. I don't think I'll ever be able to give up ice cream or cheese (even though I know about the enzyme-from-dead-animals part of the cheese making process).

I do not eat animals, because i respect theirs life.

Pasta in Gorgonzola sauce.

first cook the pasta *aldente*
chops some schallots and cook it with white wine, making a *reduction*
And put some creme fraiche, salt, cayenne pfeffer, and your favorits herbs.
Mixt now with the pasta,and that all ,of course some parmesan on the top, not too much.
Too much parmesan smells like vomit

That sounds delicious!

My main reason for not eating animals is kind of like the reason most people aren't cannibals. It feels kind of wrong. But I hasten to add that I understand the food chain is a natural and normal part of life and I'm fine with everyone else eating meat. (But glad to be married to a vegetarian gourmet cook.)
