BTW - these are gorgeous. I just wonder if they are sharp enough to grab into the cob or not. But truly, I think I want.

Those are great!

I have to buy another hand-held blender, a stick blender, threw my old one out years ago.

For various reasons, also.... soap. Yes, making soap.

Never really used or learned to use a pressure cooker, save for one or two experiments. It's like this strange, foreign thing that sat in my kitchen unused for years then finally got chucked when I couldn't justify something I don't use taking up space.

I know people swear by them but....

I broke down and got a stick blender - a very expensive one. Because I had gift certificates at William Sonoma, so I treated myself. I haven't used it yet. I keep forgetting about it.

Never, put things on a high shelf to temporarily get them out of the way when you're only 5'. You may as well forget you even purchased them.

(Hopefully this will remind me to ask Ghosty to pull it down for me).

I did, however, finally use the gigantic lobster pot I got months back. It is enormous. Took forever to come to boil even with my professional stove but it certainly did the trick of holding 2 good sized ones without me having to worry about the darn thing boiling over.

Yeah, I'm just buying a $16 one, there is no such thing as "superior, therefore expensive, stick blending" to me.

well to be honest i am scared of my pressure cooker.. and i hate that i have to stand guard when its on the gas...
but i love the results..

the wand blender thingie.. we have a braun that comes with a bazillion attachments.. and its really really wonderful..
sometimes all i can stomach are smoothies.. which help disguise the taste of protein shakes.. and with the wand i can make them straight in the glass...

its also good for batter of all sorts ..whipping cream.. creaming butter and sugar etc.. and chopping cabbage and stuff.. i dont think i could do without it.

They are great for smoothies (one of the reasons I am buying a new one) and creaming sugar/butter but I rarely bake.

I didn't have fancy attachments on mine though.

Yeah, the pressure cooker scares me too.

I would have to buy from Amazon beecuuuzzzzz......

Once and a while for various reasons they offer you a trial of their Premium Membership, which also means free two-day shipping on every order . Io is not a stupid cow so she always says, oh yes, Amazon, I want to try that wonderful service for a month............. then cut me off, lol. (you only get a month trial then it's like 80 bucks but you can even say "don't charge me for this shit" from the start, now)

It's a good deal and they are honest and will cut you off, not charge you after a month so take them up on it, if offered.

I'm going to copy paste this because.... Io is actually not in a good way right now.

btw, Claiborne taught me most of what I know about serious cooking technique, his Kitchen Primer is one of my Bibles.

so.... from another forum..... far, far away......

Even with the food processor, I drizzle the oil (whatever I'm using) in.

Were all your ingredients at room temperature? If they're any colder than that, you'll have runny mayo, for sure.

I often use all extra virgin olive oil, and it works just fine.

Here's a recipe that's pretty close to foolproof. You can use all olive oil if you'd like.

Basic Mayonnaise

1 egg yolk
1 teaspoons Dijon mustard
pinch each sea salt & white pepper
2 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
1 ˝ cups vegetable oil (such as soy or safflower, which have no flavor)

1. In a food processor fitted with the metal blade, put egg, mustard, salt and pepper, lime juice and olive oil. Turn on motor to blend the mixture. Leave the motor running, and dribble the vegetable oil in a slow steady stream into the mixture. (When all the oil has been absorbed, your mayo is finished.)

Quote:
the processor mayo shouldn't break. craig claiborne reminds folks to pulse the yolks in the machine for only a "split second" and then to start drizzling oil. allowing the oil to flow in thru one of the two holes in the processor top manages the pace of the drizzle nicely. after about half of the oil is incorporated, things are less critical and a two-hole drizzle is fine. i add acid to the finished mayo, not to the yolks/mustard.

Quote:
That is the method I use as well and I've never had a problem.

All ingredients must be a room temperature.

I would never attempt making mayo by hand. What a whipping, literally and figuratively.
There are more methods/advice here:

Defeated By Mayonnaise
