MICROWAVE CARAMELIZED ONIONS
An original recipe by BumbleBeeBoogie

This is a fast method for caramelizing onions when you don't have time to cooked them on top of the stove over heat.

2 tablespoons butter
1 teaspoon extra virgin olive oil
1/4 teaspoon salt
freshly ground black pepper, to taste
1 cup yellow onions, peeled and thinly sliced

In a microwave bowl with a lid, place the butter, olive oil, salt and freshly ground black pepper; microwave on medium for 30 seconds.

Add the onions; stir to coat in the melted butter. Cover the bowl and microwave for 5 minutes on high. Take off the cover, and stir the onions; there should be good bit of liquid in the bowl.

Microwave, uncovered, for 5 more minutes; stir the onions, they should not yet be brown. Microwave, uncovered for another 3 to 5 minutes, until the onions get brown around the edges. If you like your onions crispy, microwave them a bit longer, but watch them carefully so they don't burn.

Very wrong! But it tasted just like in the skillet. Timing after the second 5 min is important.

I rather like stirring the onions in the skillet while they carmelize, they smell so yummmmmy I would miss that by using the microwave, even if the end result is the same, I would lose out on the Zen of onion cookery...

Oh, I agree, I would only use this to save time. Like tonight, it would have been convenient because I was sauteing a boatload of veggies, if I could have done the onions in the microwave it would have been nice.

I've also heard of making them in a crock pot or in the oven, especially for large batches.

I've been doing zucchini chips in the microwave for a little while now. I usually do them in the oven but it's been too hot to have that on so I tried the microwave method when I saw it on a geek site.

No, it's the slyxdexic phonetic gender neutral version on the Cayenne and Cayandy peppers. Cayandy being the male pepper, its stronger and not as good looking as the female.
